Pan Seared Pork Cutlet with Mango Salsa

1 onion

2–3 tomatoes

2 tablespoons cilantro

1 mango

½ jalapeño

Juice and zest of ½ lime

A bowl of ice water



4 pork cutlets

A dash of salt and pepper

2 tablespoons paprika

2 teaspoons chili powder

1 tablespoon onion powder

1 tablespoon garlic powder





Finely dice the onion and place in ice water.

Medium dice the tomatoes and mango. Mince the cilantro, then take the ribs and seeds out of the jalapeño and mince also. Take the onions out of the ice water. Zest and squeeze the lime. Mix mango, cilantro, tomatoes, jalapeño, onion, lime juice and zest in a medium sized bowl.



Heat a skillet over medium-high heat until pan is hot. To make the pork rub combine the salt,

pepper, paprika, chili powder, onion powder, and garlic powder. Rub equally at all pork cutlets. Add oil to the pan and sear on each side for about a minute per side.

Assemble and enjoy!
